This is the meal plan for the week of January 19-25 2013

Saturday, January 19
Dillon and his cousin have birthdays just one day apart.  We celebrated their birthdays at our family favorite, The Old Spaghetti Factory.  Their gluten-free menu is wonderful!

Sunday, January 20
Weekend off.  So after church in the morning, we had soup and sandwiches for lunch.  Lunch is one of those meals I really get stumped on.  Dillon will only eat a grilled cheese sandwich.  Other than that, he doesn't eat bread.  And he likes soup.
Huh, will have to remember what we actually ate on Friday, because my list says we had Baked Garlic Brown Sugar Chicken for dinner on Sunday!

Monday, January 21
Dillon's birthday!  He turned 4 years old!  I made his favorite, pizza for dinner, and he had some ice cream with whipped cream for dessert.  My kiddo does not like cake!

Tuesday, January 22
Thai Peanut Noodles.  Holy moly!  I didn't know it was so easy to make peanut sauce!  I got the recipe from Spark Recipes. Coach Nicole's Tasty Peanut Sauce.

Friday, January 25
I knew that Dillon was going to have a doctor's appointment in the afternoon, so I wanted something easy for dinner.  I put some chicken breasts in the crock pot with some home made taco seasoning and a cup of salsa.  I let it cook on low for 8 hours, and when we got back from Dillon's checkup, dinner was ready!  We had tacos with the chicken, it was so good!  And Dillon totally ate it up!


Hello, my name is Trista.  A few years ago, I found out that I was gluten-intolerant.  Since then, I've been on a journey of learning new ways to prepare foods.  I had to find new ways to enjoy the things I love, so that it doesn't make me sick.  I love cooking healthy food for my family.  I'm always browsing the web and cookbooks for new recipes and there is a wealth of wonderful food blogs, magazines and cookbooks out there!
Every week, I make a meal plan.  I like to have a meal plan for the week because I find that it helps keep me organized and it helps to avoid those nights of "Oh no!  What are we going to have for dinner?"  Because for me, pulling through the drive-through is not really an option anymore.  I mean, I could go get a burger with no bun, and no fries...but really, what's the enjoyment in that?  I like to savor and enjoy my food, and drive-through just doesn't cut it for me.
I do have to admit, that I do sometimes get stumped when I'm trying to meal plan.  I live with my husband and a picky four year old.  It makes it hard to remember sometimes what worked before and what didn't.  So I've decided to start a record of our weekly meal plans, and make note of what we liked, and what we didn't.  That way, I've got a list to come back to if I need to.  Then again, I don't always make the same things twice.  I get bored of repetition quickly.
So let's get started!

This meal plan is from a couple of weeks ago.  I tend to start my meal plans on a Saturday seeing as I get paid on Friday, and tend to grocery shop on Saturday.

Saturday, January 12, 2013
This is my weekend to work, and so we attend church Saturday night.  Made Crockpot Pizza soup.  Was very good, but the recipe called for ground sausage and I thought it would be too much in the soup with the pepperoni.  Ended up wishing there was sausage in it!

Sunday, January 13
We had friends over for dinner.  One of our local grocers has these fantastic steak pinwheels stuffed with gorgonzola cheese, spinach and sun dried tomatoes.  We served this with a quinoa pilaf and some steamed carrots.

Monday, January 14
Day off from work.  Had soup and sandwich for lunch, very basic.  Then for dinner we tried baked fried rice from Oh My Veggies.  It sounded totally good!  However I have no idea what went wrong, I followed the recipe and it ended up a total failure.  The recipe says to bake the rice for an hour and maybe my oven cooks too hot or something, because the rice was completely dried out.  Hard and crunchy like it had never been cooked at all.  We ended up having dinner at my mom's.  Mom to the rescue!  I might try this recipe again sometime and just watch the rice more closely.  I have a feeling that it might only need half an hour.  If that.

Tuesday, January 15
Leftover home made chicken nuggets, Annie's Homegrown Gluten Free Creamy Deluxe mac and cheese, and a steamed veggie

Wednesday, January 16
Pork Chops (I did bag and season), some polenta, and some roasted Brussels sprouts with onion and bacon.  This meal was a flop.  Hubby and I were having a somewhat tense night, which made it hard to enjoy dinner.  Neither of us really felt like eating.  The Brussels sprouts were good, but the rest, not so much. 

Thursday, January 17
Leftovers.  So simple.

Friday, January 18
Baked Garlic Brown Sugar Chicken and roasted broccoli
This was good...but might try cutting chicken breasts into smaller pieces next time.

Ok, so that's that!  I've got a couple more meal plans to post, and I promise I'll take pictures, too!  I hope this is beneficial to someone other than myself!
